Wheat Berry Salad with Goat Cheese

6 (1 1/3 cup) servings
Cal 253, Fat 9.7g, Protein 9.2g, Carb 35.7g, Fiber 6.8g

Ingredients:

1 1/4 cups wheat berries (hard winter wheat)
2 1/2 cups chopped english cucumber
2/3 cup thinly sliced green onions
1 1/2 cups chopped arugula
6 Tbs minced flat leaf parsley
1 Tomato diced or 1 pint grape tomatoes, halved
1 Tbs lemon zest
3 Tbs lemon juice
1 tsp salt
1/2 tsp black pepper
1/2 tsp sugar
2 Tbs olive oil
3 oz crumbled goat cheese

Directions:

cook wheat Cooked Wheat Berries. and chill.  Add all ingredients and enjoy.
